Hard to beat a nice pot of black eyed peas on a chilly day. This recipe is simple, yet packs a bit of spice with the jalapenos. Give it a try and feel free to tweak the spiciness to suit your tastes.
Ingredients
- 1 bag dried black eyed peas
- 1/2 onion, chopped
- 2 jalapenos, chopped
- 3 strips turkey bacon
- 5 ounces turkey breakfast sausage
- 6 cups water
- Salt and black pepper to taste
Instructions
- Soak peas overnight or follow instructions on the bag
- Brown bacon and sausage in a skillet on medium heat, set aside
- Brown and soften onion in the same skillet
- Add ingredients to a large pot
- Bring to a boil
- Reduce heat, cover with lid slightly ajar and simmer for 2 hours
